How to Make Delicious Rice 'n' Stuff

Dice small red onion, celery stalk, and half a tomato.
In large saute pan, saute these in 2 T corn oil on high heat.
Assemble from leftovers in fridge:
1/2 cup diced chicken breast
1/4 cup cooked ground beef
2 hot dogs thinly sliced (leaving one (1) in packet for kitty, who likes them lately)
1 cup meat chili with beans
Add these to pan, mix together, lower heat. Cover to warm. Then add
3 cups cooked brown & wild rice (prepared with beef stock)
1-1/2 cup white rice from takeout box
1/2 cup water
Cover closely and steam 10 minutes.
Turn & stir so it browns but not burns until water is taken up.
Drizzle with fanciest olive oil available.

Next time I might start with bacon.
Or add an egg.
Some kind of nuts?

Thing is, I'm not going to go buy any for this purpose. Rather the reverse.

Am touched by the thought of kitty having her own hot dog in the fridge. Glad it's not just me as I eye Rosa's special storage box containing her fish and chicken.

She polished that off and now I am cleaning off bits out of the rice n stuff. She subsists mostly on crunchies and butter, but likes to sit down with us in the dining room at the appropriate time. Hold the rice.

She still eats. That's cool. Impressed by the combination of chicken, hot dogs, ground beef, 3 kinds of rice, etc. Sounds yummy in the end--pure comfort food. I got Jim a bunch of frozen stouffers, mac and cheese with broccoli and a couple of Amy's big bowls. He will have food. Al's chocolate cake was a big hit with book group. I made muffins to take to Minneapolis with me, feed Jim and Al and send home with bookies. Good night. Great conversation. A bottle of champagne.
